Jessica Cummins, a second-year student of the Barbados Community College Hospitality Institute, copped the Spirit of YCO Award and the Best Ambassador Award at the seventh International Young Chef Olympiad 2021. The virtual event staged by the International Institute of Hotel Management in partnership with the International Hospitality Council London attracted participants from 50 countries. Twenty-year-old Cummins, the lone Barbadian representative, is proud of her accomplishments. She told Barbados TODAY: “I felt really good. I was happy that they saw my enthusiasm and felt my energy towards what I do.” Cummins, a past student of Queen’s College, was introduced to the Young Chef Olympiad following her gold medal win in the ooking segment of the World Skills Barbados competition last year. The Olympiad saw two main rounds. In the first round, contestants were divided into virtual breakout rooms based on their time zones and were given two-and-a-half hours to prepare three dishes in highly monitored conditions. In the second round, her dish was a Gateau St Honoré, a dessert. “It was a bit of a challenge competing in a space where I didn’t have the resources I would have had at my institution but I gave it my best regardless. “I was nervous but focused and afterwards I felt relieved in a sense.
