Mothers across the island enjoyed a day of relaxation as they were feted by their loved ones. While some enjoyed the scenic tour hosted by the Transport Board, which travelled to the Farley Hill National Park, many flocked to restaurants across the island to enjoy the sumptuous delicacies which were on offer for Mother’s Day.

Among the establishments that the Barbados TODAY team visited which were booked to capacity was the recently opened The Grill at the Estates. Lola Millington, the Food and Beverage Manager, said, “For Mother’s Day, we did a lot of planning and organizing to ensure that everything was going to run seamlessly, and I must say that so far it has been successful. The guests are really enjoying their meals, drinks are amazing, and the desserts are decadent.” For the occasion, their mixologist concocted the rum-based A Mother’s Love. She added, “We were fully booked from start right down to the end, so we actually had to close off reservations. I must say, the response has been amazing.”

Nicole Craigg, Restaurant Manager of the Lighthouse Terrace Restaurant at Hilton Barbados Hotel, confirmed they were fully booked prior to Easter. She told the media, “Last year we had our lunch in the ballroom area so it would have been a bigger rooming area. What we find is that people like the intimacy of Lighthouse Terrace, so we decided to do the luncheon in the Lighthouse Terrace this year so it can be a little more intimate for our guests.” Vocalist Rhesa Garnes provided entertainment.

According to Germaine Harte, Head Chef of On the Water at The Sands Barbados, they were able to attract more non-resident diners for their breakfast buffet. He added, “For lunch, we were fully booked out as well. It was a very successful day, I would like to say.” Their team is already in the planning stage for Father’s Day. Harte promises that the menu will be tailored specifically for their preferences. He added, “It’s going to be a bit macho with things for the dads.”

Also reporting capacity bookings was Dis Old House Kitchen and Garden at Long Bay in St. Philip. This popular dining spot provides traditional Barbadian meals with a twist. Diners enjoyed their spin on the well-known Bajan 1-2-3 dish. Manager and part owner Shakira Sealy said, “We did a smoked corned beef brisket with some crispy parmesan potatoes and a ragu linguine pasta.”

Another menu option was citrus herb chicken with rice and peas accompanied by sides of plantain, coleslaw, and roasted vegetables. Their eclectic menu included escovitch fish served with coconut rice and red beans with sides of roasted vegetables and plantain.

The vegans were also catered to with lentil balls, spinach pasta and a spicy marinara sauce. A photographer was on site so mothers could have a keepsake of the experience. Patrons also enjoyed a performance by vocalist and guitarist Alex Cummins. (STT) ]]>
