Easter Recipe Special: Creole Sardines

Ingredients

  • 2 can of Western Sardines
  • 2 can Western Diced Sauce
  • 1/2 bell pepper, julienned
  • 1/2 onion, julienned
  • 4 cloves garlic, mashed
  • 1 tablespoon of tomato sauce
  • 2 cups water
  • 1 organic bay leaf
  • 1/2 bunch chopped thyme
  • 1/2 bunch chopped marjoram
  • 1 1/2 teaspoon organic ground cumin
  • 1/2 teaspoon organic oregano
  • 1/2 teaspoon organic cayenne pepper
  • Sea salt to taste
  • 1/2 bunch cilantro or parsley, minced

Method

  1. Sauté olive oil, bell pepper, garlic ,thyme , marjoram and onion in a medium to large pan over medium heat until fragrant and onion is translucent.
  2. Add diced tomatoes, tomato sauce, water, cumin, oregano, thyme ,marjoram and bay leaf . Stir well and bring to a boil.
  3. Reduce to a simmer and add sardines . Cook on low for 20 minutes.
  4. Serve with rice and salad.
